Thanksgiving

Yeah, I know this post is late, but I figure if we're still eating leftovers, it can't be THAT late:)

This is the 2nd year we've opted to go non-traditional with our feast. I imagine we will continue going completely Asian for one day of the year. We might need to implement this meal for other holidays. I mean it's just SO good!

We did make a turkey too so we could have the meat for sandwiches. In fact, I'm going to make Mexican Chicken, um Mexican Turkey with it tonight.

This year Karen and Keilee joined us, and I'm so glad they did. They're the kind of friends that aren't really friends anymore; they're our family. We love you guys!!!

We made...
Lumpia (Filipino egg rolls)
Fried Rice
Beef Stir Fry
Yellow Cake w/ Milk Chocolate Frosting - We made Flan last year, but Bobby didn't want it again, so I went with my favorite cake.

K & K brought Sticky Chicken and Fried Rice. The Sticky Chicken was fantastic! It's sweet and addictive. Keilee made the cutest cupcakes. They were chocolate and frosted and she used candy corn, marshmallows, and sprinkles to make them look like little turkeys. TOO CUTE!

Homemade Lumpia. They aren't hard to make. It's just a long process and a lot of prep time, but they are SO worth it. Get the recipe HERE I have made some changes though...like I don't use ground pork. I use either pork chops or tenderloin, fried and minced in food processor. I double the recipe. Walmart has egg roll wrappers in the produce dept. We also have to eat this with Jufran Banana Sauce. There's an Asian store in Huntsville that carries it. There's a HOT variety that is freakishly HOT! I have to mix the two.

Tango even joined the festivities. He shed last night so he's back to his vibrant color now. On a side note, I measured the skin he shed...a whopping 21" compared to 19 1/2" last time he shed.

Early Thanksgiving

Cathy invited us over for a Thanksgiving get together today. She made delicious ham, turkey, deviled eggs, dessert and everyone brought something to share. It was a fantastic meal with amazing people! We had so much fun! I am so thankful for this group. Thank you Cathy for a wonderful day!
